cheeze-luv gluten free crackers

Post by tricycle acres

hommade cheez-its

Just like the processed snack cheez-it’s or cheese-nibs these golden cheesy puffs are perfect for snacking… only these are gluten free and made with real food… well aside from the orange cheese I purchased just for this occasion! I had an epic holiday kitchen marathon today which started with another round of Hot Damn Bacon Jam, then I made a batch of Amazing Apple Pie Jam followed by a double batch of these darling cheese-luv crackers. All day I was imagining how amazing a dollop of apple pie jam would be atop of fresh crisp cheese cracker, and I was more than right! This combo is like an instant cheese slice on an apple pie party in your mouth! Killer Killer Combo!

So if you want to indulge in some holiday cheer these cheesy crackers are the ticket. The dough comes together in less than 2 minutes most of the time is in the shaping of the crackers, and as I am a master cookie cutter, I opted for a tiny scalloped heart cutter for my cracker shape. Originally I though my mini ravioli tray would make the perfect shape crackers.. but after a few sticky battles, I busted out the cookie cutters. You can of course use a scalloped cutter and cut little squares, but I am a sucker for a heart shaped treat! Whatever shape you choose, I promise you will swoon for these little darlings. Try to not eat them all, I dare you.

In a processor combine:

1 1/2 cups sharp aged orange cheese

1/4 cup butter

1 tbsp tumeric

1 tbsp sea salt

2 tbsp black pepper

1 tbsp garlic powder

Pulse until the mix looks like gravel

Then add in 3/4 cup of your favorite organic gluten free flour mix

along with 2 tbsp organic corn starch

Pulse some more and add up to 3 tbsp of cold water… but don’t make it too wet… add 1 tbsp then pulse well, before adding another addition of water. Very quickly the dough will ball and your off to the races.

Remove dough ball from processor and pat into a round, wrap with baking parchment (which you can reuse to bake on later) set in fridge to cool for about 30-50 minutes.

Once cooled roll out to 1/8″ thick and cut into desired shape. Place crackers on to baking parchment and bake for about 12-14 minutes at 375, or until just a wee bit brown on the edges.

Keep air tight…defiantly serve with apple pie jam and enjoy!
