I know sounds grim, but in fact it’s crunchy and divine, and so easy! What a great way to put up lovely jars of salad for winter. You know I am a HUGE fan of fermenting sauerkraut, but sometimes it’s nice to use up all you cabbage without becoming super intimate with it for weeks, if your feeling tight for space or time for fermenting, this is a fun addition to the pantry!
