Oooh Please don’t let the name fool you, this soup is anything but boring. I first tasted this at the yellow deli, and has since become a favorite flavor of mine. I emulated the recipe pretty closely and just adore this hearty vegan fall soup! It actually remind me a lot of french onion soup. If you have an extra cabbage or 12 around, here is one good use!
In a large soup pot slowly caramelize onions in a drizzle of olive oil
Once onions are golden brown add cabbage shredded fine and carrots (cut with spiralizer if you have one, otherwise shredded is great). Top with 1 L of hot water and onion cubes
add 2 jars of stewed tomatoes + apple cider vinegar
tie springs of thyme into a bouquet and add to simmering soup.
Season with paprika and S+P to taste.
Allow to simmer for at least and hour, but the longer the better.

|3 large yellow onions|
|2 pints of stewed tomatoes|
|2/3 cup apple cider vinegar|
|2 organic onion soup stock cubes|
|6 sprigs of fresh thyme|
