Description

The word turtle brings up images of thin caramel streams lacing pecans and mouthwatering chocolate, and these little bites deliver on all of those points, with out a bunch of sugar and GMO corn products! These super food balls are power packed chocolate en-robed bliss. And they take all of 10 minutes to make. no bake. no gluten. no corn. no dairy… really nothing but fruit, nuts, seeds and chocolate and a little coconut oil for good measure.

Start by chopping 1.5 cups of your favorite nut / seed combo ( used walnuts, pecans and sunflower seeds) combine with 1/2 cup date paste by kneading with your hands (you can make date past by pulsing whole dates in a food processor, but I love having a bucket of paste in the pantry at all times). Mix in a pinch each of sea salt and cinnamon. Now portion your nut mix into small bites (I used a 1/2 oz mechanical ice cream scoop)

In a double boiler melt:

3/4 cup of the best quality dark chocolate you have

1 tbsp coconut oil

roll nut balls into chocolate and allow to set on a wire drying rack.

Sprinkle with course sea salt to finish if you like.

Once cool and set, dig in enjoy! The dates are so very caramel-y, no one will ever miss the corn syrup!

1 1/2 cups of your favorite nut / seed combo
1/2 cup of date paste
pinch each sea salt + cinnamon
3/4 cup of dark chocolate
1 tbsp coconut oil
course sea salt to finish
